Shopify is a closed, hosted platform so you wont have any access to modify the code. You would need to use a 3rd party cropping solution.
You could look at the aviary.com web editor, which will embed a highly customizable UI for photo editing. This would crop the image and return a final URL for inclusion in the cart.
